Store-bought vegan cheese, such as Chao, Daiya, Follow Your Heart, Kite Hill, and Violife, melts, stretches, and cooks well in recipes.
You can also make an easy vegan cheese sauce by blending soaked cashews with water, nutritional yeast, lemon juice, garlic powder, onion powder, and salt until creamy. Or you can use cooked potatoes and carrots instead of cashews and blend them with the same seasonings.
For an easy cheesy-flavored topping, sprinkle nutritional yeast (try Bragg) over pasta, popcorn, vegetables, and other dishes.
Use firm or extra-firm tofu for breakfast scrambles, stir-fries, bowls, and other dishes where you want tofu to hold its shape. Press out excess water so the tofu absorbs more flavor. Marinate it with spices, sauces, or other seasonings, then bake, air-fry, sauté, or pan-fry it until golden and crisp.
