Ingredients

  • For the oatmeal
  • ½ cup (45 g) old-fashioned rolled oats

  • ¾ cup (180 ml) unsweetened oat or soy milk

  • ¼ cup (60 ml) water

  • ½ ripe banana, mashed

  • ½ tsp vanilla extract

  • ¼ tsp cinnamon

  • Small pinch of sea salt

  • 1 –2 tsp maple syrup, optional

  • 1 tbsp almond or peanut butter, optional for extra creaminess

  • For the brûléed banana
  • ½ banana, cut into thick slices

  • 1 –2 tsp brown or coconut sugar

  • Tiny pinch of cinnamon

  • ½ tsp vegan butter or coconut oil, if using a skillet

  • Optional Toppings
  • 1 tbsp vegan dark chocolate chips, optional

  • 1 tbsp puffed quinoa, puffed rice, or chopped toasted nuts, optional

  • 1 tbsp creamy almond or peanut butter

  • Pinch of flaky salt, optional

Directions

  • Make the creamy oatmeal
  • Combine the oats, vegan milk, water, mashed banana, cinnamon, and salt in a small saucepan.
  • Bring to a gentle simmer over medium heat, then reduce to medium-low.
  • Cook for 5–7 minutes, stirring frequently, until thick and creamy.
  • Stir in the vanilla and, if using, nut butter. Taste before adding maple syrup—the mashed banana may make it sweet enough already. If the oatmeal gets too thick, loosen it with another splash of vegan milk.
  • Brûlée the banana
  • For the deeply caramelized banana slices, you have two options:
    – With a kitchen torch: Arrange thick banana slices on a heatproof plate. Sprinkle their cut surfaces with a thin, even coating of sugar. Torch until the sugar bubbles and develops a deep amber crust.
    – Without a torch: Heat the vegan butter or coconut oil in a nonstick skillet over medium-high heat. Sprinkle the banana slices with sugar and a little cinnamon. Put them sugar-side down in the hot pan and leave them undisturbed for about 1–2 minutes, until deeply caramelized. Flip briefly, then remove. Don’t move them around too much—ripe bananas soften quickly.
  • Assemble
  • Spoon the hot oatmeal into a bowl. Add tbsp of optional almond or peanut butter.
  • Arrange the brûléed banana slices across the top, then scatter over the vegan chocolate chips and puffed quinoa.
