12 oz. vegan chicken (try Just Meat, soy curls, or MorningStar Farms chick’n strips)
1 Tbsp olive oil
1 small yellow onion, diced
3 cloves garlic, minced
1 chipotle pepper in adobo sauce, finely chopped
1 (15-oz.) can crushed tomatoes
1 Tbsp tomato paste
1 tsp ground cumin
1 tsp dried oregano
½ tsp smoked paprika
½ tsp salt
¼ tsp black pepper
2 Tbsp chopped fresh cilantro
Directions
- Prepare the vegan chicken according to the package directions.
- Heat the olive oil in a large skillet over medium heat. Add the onion and cook for 4 to 5 minutes, until softened.
- Add the garlic and chipotle pepper and cook for 30 seconds, stirring frequently.
- Add the vegan chicken and cook for 3 to 4 minutes, stirring occasionally.
- Stir in the crushed tomatoes, tomato paste, cumin, oregano, smoked paprika, salt, and pepper.
- Bring the mixture to a gentle simmer and cook for 10 minutes, stirring occasionally, until the sauce thickens slightly.
- Remove from heat and garnish with fresh cilantro.
