Ingredients

  • 12 oz. vegan chicken (try Just Meat, soy curls, or MorningStar Farms chick’n strips)

  • 1 Tbsp olive oil

  • 1 small yellow onion, diced

  • 3 cloves garlic, minced

  • 1 chipotle pepper in adobo sauce, finely chopped

  • 1 (15-oz.) can crushed tomatoes

  • 1 Tbsp tomato paste

  • 1 tsp ground cumin

  • 1 tsp dried oregano

  • ½ tsp smoked paprika

  • ½ tsp salt

  • ¼ tsp black pepper

  • 2 Tbsp chopped fresh cilantro

Directions

  • Prepare the vegan chicken according to the package directions.
  • Heat the olive oil in a large skillet over medium heat. Add the onion and cook for 4 to 5 minutes, until softened.
  • Add the garlic and chipotle pepper and cook for 30 seconds, stirring frequently.
  • Add the vegan chicken and cook for 3 to 4 minutes, stirring occasionally.
  • Stir in the crushed tomatoes, tomato paste, cumin, oregano, smoked paprika, salt, and pepper.
  • Bring the mixture to a gentle simmer and cook for 10 minutes, stirring occasionally, until the sauce thickens slightly.
  • Remove from heat and garnish with fresh cilantro.

Notes

  • Serving suggestions:
    Serve over white rice.
    Spoon into warm tortillas and top with avocado.
    Pair with a simple green salad or roasted vegetables.
